Tried to make macarons for my daughter's birthday. Four batches in three days. Every single one failed.

Thought it would be a fun afternoon project. Ha. The first batch came out flat as pancakes. Second one had feet that spread sideways. Third one was hollow shells. Finally got it right on the fourth try. Took about 9 hours total including cleanup. Who else has had a recipe humble them like that?

Did you end up saving any of those failures for something else though? I had a batch of hollow shells that I crushed up and turned into a pretty good ice cream topping. Macarons are just mean honestly, they look so simple and then they just laugh at you. I remember my first time I had batter so runny it basically puddled into one giant cookie on the pan. Took me a good three tries before I even got something that resembled a shell. The measuring by weight thing really is the secret though, once I stopped eyeballing it everything got way more consistent.

Four batches in three days" oh man I felt that in my soul. Macarons are no joke, they will absolutely humble you. I've been there with the flat pancakes and the sideways feet, it's brutal. One thing that helped me was aging my egg whites for a full 24 hours in the fridge, uncovered, and using a kitchen scale for everything down to the gram. Also if your batter isn't flowing like lava and you can do a figure 8 without it breaking, don't even bother piping yet. Glad you finally got that fourth batch right though, that victory must have felt amazing.
