PSA: overheard a bakery clerk in line at the store say she never measures her flour, and I get why my bread kept turning out dense now
I was waiting behind her at the checkout on 5th Street and she told the cashier that scooping flour straight from the bag can pack in almost double the amount a recipe wants. That clicked for me because my last three loaves came out like bricks and I had been doing exactly that the whole time. Now I fluff it with a fork and spoon it into the cup, and my sandwich bread finally rises right. Has anyone else had a recipe fail just from how they measured the flour, or am I late to this party?
