My aunt in Cincinnati swears her boxed mix beats my from scratch cake, and I'm starting to wonder if she's right
I walked into her kitchen last Sunday and watched her pull a cake out of the oven that was taller and softer than anything I've made in 5 rounds of testing recipes, and now I can't decide if scratch baking is really worth the extra 40 minutes or if we're all just being snobs about a $2 box.

Boxed mixes are often just pre-measured flour, sugar, and baking powder, so the real trick is her oven temp.
