I was a scoop and level guy for 6 years and my loaves were always a little dense but I just blamed the oven. He pulled out a $12 kitchen scale, weighed 500g for the same recipe I use, and my next bake at home rose higher than anything I'd made before. Now I'm weighing everything and I'm mad I waited this long, anyone else switch over late?
A $12 scale changed your whole baking life? Come on man, that sounds like the placebo effect with extra steps. Flour settles and packs down in the bag, sure, but a cup scooped the same way every time is gonna be close enough for most loaves. People baked good bread for hundreds of years before anyone owned a gram scale, and they somehow survived. If weighing makes you happy then go for it, but blaming a dense loaf on the oven vs a scale is a 5 gram difference, not some magic switch.
