Pro tip: don't buy that cheap silicone mat from the big box store
I thought I was saving $15, but the thing warped in my oven on its first use and ruined a whole batch of shortbread. Has anyone found a good brand that actually lies flat?

Ugh, I had the exact same thing happen with a Wilton mat. It curled up at the edges and fused to my oven rack. I ended up buying a Nordic Ware one and it's been totally flat for two years now.

Actually, silicone mats are made to handle oven heat and shouldn't fuse to racks. That sounds more like a parchment paper sheet, which can stick if it gets too hot. Silicone might warp if it's super thin or placed directly on a rack without a pan.

Remember my first silicone mat that melted into a weird modern art sculpture on the rack. Turns out I was using the cheap, flimsy kind you get in a holiday baking kit. Upgraded to a thicker one and it's like night and day, no more warping or sticking. I guess my early baking days were just a series of low-quality gear experiments.
