I finally admitted my homemade pizza was bad after 2 years of blaming the oven
For two years I kept telling my wife our oven ran cold, so I'd crank it to 550 and still get a pale, floppy center every single time. Last Saturday my neighbor, who runs a pizza shop in Rochester, came over and watched me stretch the dough, and he just started laughing. I was using cold dough straight from the fridge and rolling it flat with a pin, which squeezes out all the air and kills any chance of a real crust. He said let it sit out 2 hours and stretch it with your hands, and the next pie came out with actual bubbles and a crispy bottom. Now I owe my oven an apology. Anyone else blame their equipment for a problem that was 100 percent their own fault?
