Used to hate fermented foods until I tried kimchi from H Mart in Chicago

I always thought fermented stuff was just sour or gross. My coworker Sarah brought in a jar from H Mart last Tuesday and made me try a bite. The crunch and the spicy kick totally changed my mind. Has anyone else had a food they avoided suddenly click after one real taste?

Keep eating that stuff and your whole digestive system is gonna hate you. Fermented foods are basically spoiled food dressed up with fancy names, and the bacteria in them can mess with people who have sensitive stomachs. I tried kimchi once and spent the whole night regretting it, so I'll stick with fresh veggies thanks.

Funny you say that because I was totally on your side a few years ago. I thought fermented foods were just old food people tricked themselves into liking. Then I started doing some reading and realized the bacteria in them are actually good for most people, not harmful. My stomach used to get upset from regular yogurt, but after trying small amounts of sauerkraut, it actually settled down over time. I get that kimchi hit you hard, some people have to start with milder stuff like kefir or pickles first. Did you ever give any other fermented food a shot after that bad kimchi night?
