Hot take: I was wrong about putting sauce on wings before air frying

I always coated my wings in buffalo sauce first, but they came out soggy last Friday. Letting them get crispy for 12 minutes at 400 degrees, then tossing in sauce after, was a total game changer. Anyone have a different method for sticky glazes?

Wait, you were putting the sauce on BEFORE? I can't even picture that working, the sauce would just slide right off the skin. That's why they got soggy, it's basically steaming them in liquid. The crispy skin first is the only way it holds any sauce at all.

Got any tips for glazes that still get sticky without burning? I tried a honey sriracha mix last time but it just caramelized into a hard shell.
