Crooked studs on my latest job have me second-guessing my method

Last week I hung board on a wall where the studs were a full inch out in spots. The drywall looked wavy before I even touched the mud pan. I know guys who will stop everything to shim each stud until it's dead flat. Other guys I work with say that's a waste of time and you can just float it out with compound. I went with the float method this time, but now I'm stressed about the tape cracking next year. Is the right way to always fix the framing first? Or is getting it close and burying it in mud an acceptable part of the job? I need some opinions before my next estimate.

Fix the framing now or fight it forever with mud.

Shims and a new stud fixed mine for good.

That MUCH sway needs shims, not just compound.
