Pro tip: turn leftover rice into crispy pancake things for breakfast
My roommate's mom mentioned she fries leftover rice with an egg and a splash of soy sauce until it gets crunchy on the bottom. I tried it with some day-old jasmine rice and a random half onion in my drawer this morning and it came out way better than I expected. Anyone else got a go-to trick for using up that sad leftover rice in the fridge?

My Grandma always fried her cold rice with cinnamon and sugar for what she called "poor man's rice pudding.

...so has nobody tried using leftover rice for fried rice balls? Like you just mash it up with some cheese and an egg, roll it into balls, and fry them in a pan. They get all crispy on the outside and soft inside. Kids actually eat them without complaining which is a win in my book.
