Everyone says you need a $30 digital thermometer for caramel, but my cheap $8 one from the grocery store in Bakersfield was off by 15 degrees the whole time. I kept pulling it at 248 like the recipe said, and I got 47 batches of bitter, rock hard candy that I threw in the trash. My aunt finally told me to test it in boiling water, and it read 197 instead of 212. So I started using the ice water test instead. Has anyone else had a thermometer that just quietly lies to your face?
