Saw a guy at the Des Moines farmers market sell "no knead" bread that was raw in the middle, please check your loaves
I was at the Des Moines farmers market on Saturday and watched a vendor slice into a loaf of what he called no knead bread. The inside was straight up wet dough, not a crumb in sight, and he just kept saying it was supposed to be like that. He had maybe 15 loaves on the table and 4 people bought them while I stood there. I used to pull the same move with my first dutch oven bakes, pulling them at 40 minutes because the top looked brown. The middle needs to hit about 200 degrees or it will gum up every time. If you are selling this stuff please buy a cheap thermometer and check, and if you already bought a wet loaf let me know if it actually firmed up when you rebaked it.
