Unpopular opinion: I drink my coffee black even with cheap beans
All my friends add milk or sugar to mask the taste of budget coffee, but I like it straight. Last month, I bought a bag of store brand beans and brewed it plain. The flavor was sharp, but I got used to it after a few days. Now I prefer the honest taste without any extras.

My roommate adds just a pinch of salt to cut the sour taste of cheap beans.

Honestly, @derekl79, your roommate is a genius. My own cooking is so bad I once tried to fix a whole pot of sour beans with a handful of sugar. It was like sweet, gritty bean soup. Total disaster. Now I just accept the sour taste as part of my sad kitchen life. Maybe I should try the salt trick before I ruin another dinner.

Wondering if your beans were actually sour or just undercooked. Old beans or hard water can keep them tough and bitter no matter how long you boil them. Adding baking soda to the soak water softens them up a lot. Salt early on helps the inside get creamy too. Might save you from the sweet bean soup fate next time.
