Switched to a fish spatula after 8 years and it changed my whole saute game
I spent years fighting with a solid metal turner on the flat top at my spot in Portland. Last month this old line cook from New Orleans watched me struggle flipping eggs and said dude just get a fish spatula. I grabbed one for like 12 bucks at the restaurant supply store and I swear it made my breakfast station 3x faster in one shift. Anyone else have that one kitchen tool they refused to try for way too long?

Literally gasped when I read "Dexter turner for close to a decade." @the_hugo, you're a stronger person than me. I would've snapped that thing in half after year three.

Is it really that much better than a good offset spatula with a beveled edge though? I've been using the same Dexter turner for close to a decade now and flipping eggs has never been an issue for me. Some of us just get too comfortable with what works and write off the new thing before really giving it a shot.

Dang, I feel called out but in a good way. I was totally in the "just use what works" camp for years, swore by my old metal spatula. But I finally caved and tried one of those offset ones with a beveled edge and man, it's like night and day for delicate stuff like eggs or fish. It's not that the old way was bad, it's just that this one makes it easier without me having to wrestle with the food. I guess I was just being stubborn for no real reason.
