Shoutout to the line cook in Tulsa who told me my sauce was flat and made me taste it again
So I was working a pop up gig in Tulsa about a year ago, doing a gumbo that I had made maybe 200 times back home and thought I had nailed. This line cook named Marcus, who I had never met before that night, came up to the pass after service and said straight up, "your roux is fine but your sauce tastes like it forgot something." I got a little heated at first, not gonna lie, but he grabbed a spoon and had me taste it side by side with his and the difference was obvious. Mine was all heat and no depth, missing that acid and a little sweetness to round it out. He said he learned that from his grandma in New Orleans who ran a po boy spot for 30 years. I ended up squeezing half a lemon and a splash of cane vinegar into the next batch and the whole thing changed. It bugs me that a 24 year old kid with a nose ring taught me something I should have figured out a decade ago. Any of you ever had somebody way younger just wreck your whole recipe in front of you, and it was actually right?
