PSA: Sourcing fish today feels nothing like the old market days

I remember when I first started cooking, we'd go to the fish market at dawn to get the catch of the day. Now, most places get frozen stuff shipped in, and it's not the same. The smell of fresh fish, the sound of the market, it was part of the job. I used to know the fishermen by name, and they'd save the best pieces for me. These days, it's all about supply chains and labels. I miss that personal touch, how you could feel the quality just by looking. Sure, things are more convenient now, but something's missing. It makes me wonder if we're losing the soul of cooking.

Found a local supplier who delivers fresh catch twice a week. Still get that market feel sometimes.

How do they handle special requests from you? My guy lets me ask for things like whole fish if I want to make stock, or specific cuts for certain recipes. Sometimes he'll even text a picture if he gets something really unusual in. That back and forth is what keeps that market feel alive for me. It makes the whole process feel personal, not just another box on the step.

My place would probably forget which day is delivery day and end up with shrimp smoothies by Thursday lol. Sounds way nicer than my sad freezer fish sticks routine though.
