A little thing I saw at the fish market in Seattle last Thursday

The vendor was cutting a whole salmon and he saved all the trim, even the head and bones, in a separate tub. He told me he makes a quick stock with it for a daily chowder special. I've always just tossed my fish trim, but this seems like a smart way to cut waste and make a little extra money. Do any of you have a go-to use for your fish trim?

It's smart how some folks see value in what most of us throw out. Makes you wonder what other everyday waste could be turned into something good, right?

Totally, I've been saving glass jars for ages now. They're perfect for storing leftovers or organizing small stuff.
