Can we talk about the week my $38 grocery run turned into 11 meals and I still had $6 left over
Last Monday I walked into Aldi with $40 and a plan, and by Saturday I had made 11 meals and still had $6 in my pocket, which almost never happens for me. I grabbed a $5 rotisserie chicken, a bag of rice, dried black beans, a bag of frozen mixed veggies, and two cans of diced tomatoes, and that was basically the whole cart. I shredded the chicken into rice bowls the first three nights, then used the carcass and beans for a big pot of soup that lasted through Thursday, and threw the veggies in a baked pasta on Friday. It was the first time in a while I did not reach for my wallet mid-week, and I have no idea how to make it happen twice. What is your go-to cheap protein that stretches the farthest, because the chicken worked but I want something new?
