I finally compared pine to poplar for crown molding and the difference was huge
Honestly, I used pine for years because it was cheap. Last month I grabbed a few poplar boards from Lowes for a living room job near Raleigh and the stuff just cut cleaner with way less splintering. The $30 extra on materials saved me about 2 hours of sanding and filling gaps. Has anyone else made the switch and noticed the same thing?

... and then last week I tried poplar for the first time on a closet shelf project. I gotta say, the difference in how it takes paint blew my mind too. Pine always soaks up the first coat like a sponge, but poplar just sat there smooth. I spent more time painting that shelf than I did building it, it was that nice.

Poplar doors are insane for that too, I once painted an old pine door three times before it looked right.
