Spent $45 on a good boning knife and it changed my whole Saturday

I used to make do with those cheap throwaway knives from the restaurant supply store. Finally dropped $45 on a decent flexible boning knife last month and it paid off in one morning breaking down a whole pig. The difference in control around the joints and the lack of hand fatigue really surprised me. Has anyone else found that one tool that made their weekend prep a lot easier?

That $45 mark is exactly where the quality jumps on kitchen knives. Did you go with a stiff or flexible blade for that pig breakdown? I always debate which flex level gives better control around the knuckles and joints.

Better control around the knuckles and joints"... bro it's a knife, not a surgical tool. You're breaking down a pig, not performing open heart surgery. Stiff or flexy, $45 vs $15, it all ends up in the same pan.
