Tbh, I think the instant pot hype is way overblown for budget cooking

Honestly, I used mine for a year and switched back to my $15 slow cooker from Goodwill. The instant pot just burns cheap beans and rice if you're not watching it like a hawk, but the slow cooker runs all day for pennies and never fails. Has anyone else ditched theirs for something simpler?

Yeah, the "watching it like a hawk" part is so real. I feel like the instant pot just adds this low grade stress that a slow cooker doesn't, like you're babysitting a gadget.

Tell me about it, I had the exact same experience with mine. Felt like I was always waiting for that burn notice to pop up, especially with the cheaper staples. That constant worry just takes the easy out of a pressure cooker for me. My old crockpot might be slow, but it's never once ruined a batch of beans.

Right? That low grade stress Laura mentioned is exactly it. I wonder if @the_anna feels the same way, where the cooker just becomes another thing you have to manage instead of something that frees up your time. For me, that burn warning always seemed to hit right when I was trying to cook rice or something thick like chili.
