My $8 rice cooker died on taco night and I ended up using a pot on the stove like a chump
So last Tuesday I had this whole cheap dinner planned out, black beans and rice for like 6 people, total cost around $9. My little $8 rice cooker from the thrift store just clicked off and never came back on, mid batch. I stood there with a pot of half cooked rice and 45 minutes before everyone showed up. Ended up dumping it in a regular pot with extra water and babying it on low heat for 25 minutes, stirring every few minutes so it would not stick. It actually came out fine, maybe even better than the cooker ever did. Now I am wondering if I even need a rice cooker at all for budget meals, or if I was just being lazy. Does anyone else cook rice on the stove for a crowd, and what ratio do you use so it does not turn to mush?
Is your thrift store cooker one of those little ones with the glass lid and just a cook or warm switch? Honestly those cheap ones don't really "cook" rice, they just boil it until the water runs out and the bottom gets hot enough to trip the switch. That's why it died mid batch, it was probably on its last legs anyway. For a crowd I do 1 part rice to 1.5 parts water in a big pot, bring it to a boil, drop it to the lowest heat, lid on, 18 minutes, then let it sit 10 more with the lid on and no stirring. Stirring is what makes it gluey, so next time leave it alone.
