Ran into a retired pitmaster at a gas station who told me to stop using apple juice spray

I was filling up my truck near Lockhart, Texas about two months ago when this older guy walks over and sees my cooker in the bed. He asked what I spray on my brisket and I said apple juice. He laughed and told me he won 17 grand in competitions over 20 years and never once used apple juice. Said all it does is wash off the rub and add sugar that burns dark. He told me to just spritz with water if I have to spritz at all. I swapped to plain water on my last two cooks and my bark came out way cleaner and crunchier. Has anyone else tried dropping the apple juice and seen better results?

Seventeen grand is insane... I mean that's serious competition money, not just backyard stuff. My mind is kind of blown right now because I've been drenching my briskets in apple juice for years thinking it was some kind of secret. Water just seems too simple to work, you know? That bark getting crunchier makes me want to try it this weekend though.
