The week I ruined three loafs of sourdough in a row
Last Tuesday I came home from a 24 hour shift and decided baking would be relaxing. I forgot I scaled my starter down to 50 grams two days prior. First loaf came out flat as a pancake. Second one I overproofed by 4 hours because I fell asleep on the couch. Third one I baked at 500 instead of 475 and the bottom turned into charcoal. My wife asked if we should just buy bread for a while. Has anyone else had a week where the universe just said no to baking?

Oh man, I feel this in my soul. Last month I decided to get fancy with a brioche and I used active dry yeast instead of instant by accident. Then I tried to fix it and ended up with this weird sticky blob that never rose. And my husband came in and asked if I was trying to make play dough instead of bread. I swear some weeks the oven just has it out for you. But hey, at least you didn't set off the smoke detector at 2am like I did with that charcoal bottom.

Man that 500 degree mistake hit close to home. My third loaf last fall looked like it came straight out of a volcano. I actually cracked a baking stone once doing that exact same thing - turned a perfectly good stone into a glorified frisbee. Your wife asking about buying bread is the final boss of baking shame honestly. But hey, at least you didn't manage to fuse the loaf to the pan with burnt sugar like I did with a honey oat attempt. Sometimes the bread gods just demand a sacrifice.
