PSA: Check your yeast packet dates before you start a big bake

I tried to make cinnamon rolls last weekend and the dough just would not rise. I used the same recipe I always do, but after three hours it was still a flat brick. I checked the yeast packet and it expired six months ago. I bought a fresh pack and tried again the next day, and the dough doubled in size in under an hour. Has anyone else had a bake totally fail because of old yeast?

Honestly, this is why I date everything in my pantry now. It's the same with baking soda, spices, even that weird bottle of fish sauce. Stuff just gives up on life after a while.

That "flat brick" description is way too real. I used to think yeast was basically immortal if you kept it dry. Then I had a pizza dough disaster that proved me wrong. Now I write the purchase date on every packet with a sharpie.

Forgot to date my yeast once and baked a doorstop that could've stopped a burglar.
