Overheard my neighbor say you should always chill cookie dough for 24 hours minimum. Been doing 30 minutes and now I'm torn.

So I was at my local community bake-off last Saturday, and this guy who wins every year (I'm talking 3 years running) said he chills his dough for a full day. I've been doing 30 minutes tops because I'm impatient. Tried his way last night and the cookies spread less but they were kinda dense. Which side are you on? Quick chill for that soft center or long chill for structure?

@carr.brooke nailed it. Left a batch chilled 18 hours once and they came out like hockey pucks.
