My sister told me to ignore the recipe and add an extra egg to my banana bread

She swore it would make it moist and fluffy instead of dense like a brick. I was skeptical because the recipe has been my go-to for about 5 years. Last Sunday I finally tried it with 3 eggs instead of 2 in a standard loaf. The bread came out way too wet in the middle and almost fell apart when I sliced it. I should have stuck with what works because now I have a whole wasted batch sitting in my freezer. Has anyone else been given bad advice by a family member that ruined a bake?

Extra eggs? In banana bread? That's basically a science experiment at that point. I can't believe she'd mess with a five year winning streak like that. Applesauce in brownies though, that's a new level of betrayal. Your aunt must have been trying to make you all eat health food in disguise.

Oh man, I feel your pain. Extra eggs are supposed to make things tender but you really have to adjust the other wet ingredients too or it just goes south fast. My aunt once told me to swap oil for applesauce in brownies for "health reasons" and they came out tasting like weird chewy fruit leather that nobody would touch. It's like family always thinks they know better than the recipe that's been working for years haha. Next time just tell your sister she can eat all the ruined loaves herself.

Applesauce in brownies should be a crime... fruit leather is right.
