My pie crust crumbled into 14 pieces at Thanksgiving, grandma would've been horrified
Last Thursday I tried to make my grandma's famous pie crust recipe for the first time. She always made it look so easy. I followed her handwritten card exactly, chilled the butter, used ice water, everything. Pulled it out of the oven and it just fell apart when I tried to slice it. Looked like a pile of rubble on the plate. My aunt said it tasted fine but I know it wasn't right. I think my kitchen was too warm, around 78 degrees that day. Has anyone else had a crust fail from room temperature issues, or should I just stick to store bought from now on?
Chilling the dough used to seem like a waste of time to me. I always figured you mix it, you bake it, done. Then I tried it once with a batch of cookies and the difference was real. The cookies held their shape way better and didn't spread out into one giant blob on the pan. Something about the butter firming up back there makes the whole thing work. Now it's just part of how I do it every time.
