Still thinking about that customer who told me my sourdough looked 'too professional' to be homemade
At the county fair bake-off last fall this woman looked at my entry and said 'you didn't really make that, you probably bought it from a bakery.' I had proof of my starter I'd kept alive for 8 months but she wouldn't even look at it. What do you do when someone dismisses your work like that?

Get a little card printed up with the timeline of your starter and bring it with you to events. I had the same thing happen with my pie crust and now I just hand people a card that says "fed since March 2020" and that usually shuts it down. Or if you really want to prove it, offer to show them a photo on your phone of your starter bubbling over on your counter from that morning. People who are just being rude aren't going to change their minds no matter what you do, but it helps to have something concrete to point at.

Ngl I kinda love the card idea though. Even if it seems extra, having something physical you can just hand over takes all the emotion out of it. No arguing, no back and forth, just "here's the proof, moving on." Could even get a little stack made up for cheap at a print shop. Some people are gonna be salty no matter what, but at least you don't have to waste breath on them. Plus it becomes a bit of a conversation starter with people who are actually curious instead of just trying to call you out.

Question does it really matter that much? I mean yeah it's annoying when people act like gatekeepers but making a whole card for it seems like overkill. They're just talking out of their ass most of the time anyway. Plus if you show them a photo they're probably gonna find some other reason to say you're faking it. Honestly just tell them to mind their own business and move on, not worth the energy.
