My mother in law watched me flip chicken with tongs and said 'that is why it sticks,' so I tried her way
I was at her place in Sacramento over the weekend making wings and she just stared at me pulling them apart with tongs halfway through. She goes, 'you are tearing the skin, that is why it sticks to the basket.' I shrugged it off but my second batch came out bald in spots, so I humored her. She had me pat everything dry with paper towels, toss in a tablespoon of oil, and leave them alone for 12 minutes before touching. Pulled them out and they slid right off, no scraping, no torn skin, nothing stuck to the tray. Now I do the dry and wait thing every time and I have not scrubbed a basket in three weeks. Does anyone else's family insist on a step you thought was pointless until you actually tried it?
My uncle Tony swore by the dry and wait thing too and I always blew him off until my wings came out looking like roadkill on the grate. The oil toss before they hit the heat was the part I never did, makes a big difference. Now I just stand there for 12 minutes like an idiot instead of messing with them every 30 seconds lol.
