Tell me exactly how you did it. Mine always ends up overcooked on the outside and weirdly underdone in the middle. Did you use any oil or just throw the filet in there straight from the fridge?

It's just a piece of fish, not a science project. I patted it dry and used a little oil in a hot pan.

That dry pat is actually a huge mistake. You're taking out all the natural moisture that keeps the inside tender. A little water on the surface creates steam for more even cooking.
