Tried to fix a leaky faucet myself, ended up flooding the kitchen

Picked replacing a cartridge over calling a plumber to save $120. Broke the old one off inside the valve, water sprayed everywhere for 10 minutes before I got the main shut off. Has anyone successfully dealt with a stuck cartridge without breaking it?

My buddy tried the same thing and his kitchen looked like a swimming pool for an hour lol
