My grandma in Louisville said to save bacon grease in a coffee can, and now my fried rice is better than takeout
My grandma kept a Folgers can next to her stove in Louisville for 40 years and I always thought it was gross. She passed last spring and I found that can in her cabinet, still half full. I almost tossed it but figured I would try using it once. I fried some leftover rice with frozen peas, two eggs, and a spoonful of that grease. It was the best fried rice I have ever made, better than the $14 plate at the place on Bardstown Road. Now I keep my own can going and I add a spoon to roasted carrots, scrambled eggs, even cornbread. The smoke point is way higher than butter so nothing burns. Who else keeps a grease can and what do you put it in? I need new ideas because I am only using it for rice and eggs right now.
