Burned the bottom out of my good pot melting butter, then a cook at a diner in Boise told me to add a splash of water first
I was browning butter for a cake on a Saturday and walked away for maybe 40 seconds, and the whole bottom turned black and the smoke alarm went off. I scraped it for 20 minutes and still had to toss the pot. A cook at a diner in Boise heard me complain and said just put a spoon of water in the pan before the butter, and it gives you a little buffer so it heats slower. I tried it three times now and the butter browns without that burnt smell at the end. Does the water trick work the same for ghee, or does it just steam off and leave me right back where I started?
