Warning: My fast pour-over method backfired big time

I began dumping all the water in without the bloom phase. The coffee came out sharp and thin every time. After adding a 30-second bloom back in, it tastes full and sweet. Do not rush this step like I did.

Did you try changing the grind size too?

My old Chemex routine had me pouring all at once too. I thought the bloom was just a waste of time, to be honest. After a similar bad batch, I tried the 30 second wait and it changed everything. @fionagibson has a point about grind size, but for me, fixing the bloom fixed the coffee. Now I never skip it, and the difference is night and day.

Yeah I was the same way, always thought the bloom was just some extra step people did to feel fancy. Then I had a bag of beans that just tasted sour no matter what I did. Let it sit for half a minute before the main pour on a whim and it was like a totally different coffee. It just makes everything taste cleaner, you know? I can't go back now.
