Rant: My attempt at a classic flambé went wrong and smoked out the dining room last week.

It took me back to my first gig where we did that stuff all the time, and now the new guys just rib me about setting off the alarms again, lol.

Oh man, consider that your free upgrade to extra smoky flavor. The fire alarm going off is just the dinner bell for a truly authentic experience. Sounds like you gave the whole place a free deep clean with that much smoke. At least your dining room now has that just-seared ambiance down perfect. Better luck next time, maybe try it outside.

At my first job in a French kitchen, I thought flambés were no big deal. After I smoked out the whole line during service, I learned real quick how hard they are.

Used to think they looked easy too... watching a real chef do it right changed my mind real quick. Gained a way more respect for it after that.
