Oh man, consider that your free upgrade to extra smoky flavor. The fire alarm going off is just the dinner bell for a truly authentic experience. Sounds like you gave the whole place a free deep clean with that much smoke. At least your dining room now has that just-seared ambiance down perfect. Better luck next time, maybe try it outside.

At my first job in a French kitchen, I thought flambés were no big deal. After I smoked out the whole line during service, I learned real quick how hard they are.

Used to think they looked easy too... watching a real chef do it right changed my mind real quick. Gained a way more respect for it after that.
