Crossed 500 covers in one night last Saturday, still processing it
I've been on the line for about 8 years now, mostly at a busy spot in Portland, and we had this crazy event where we did a private dinner plus the regular menu. I didn't even look at the ticket count until we were breaking down at 1am, and the GM mentioned we hit 512 covers between 4pm and midnight. That's over 80 an hour with a six person line, and I honestly didn't feel the rush until my feet started throbbing on the drive home. It got me thinking about how we track our own progress as cooks, like I always measure myself by prep speed or plating consistency, but that number sort of reset my idea of what a team can push out when the rhythm is locked. The weird part is we didn't cut corners, every plate went out hot and sauced right, and the expo never lost his cool. Has anyone else had a night where the numbers just clicked and it made you look at your own stamina or workflow differently? I'm curious if I should aim for that pace more often or if that was just a sweet spot we'll never hit again.
512 covers sounds like a typo until you realize someone actually counted it. My record's like 300 and I still talk about it like I climbed Everest, so hats off. Just dont chase that pace every night or your knees will file a complaint with HR.
