Changed my mind about sheet pan liners after a catastrophe at the station
I used to think parchment paper was a waste of money and just used greased pans for everything. Then last Tuesday during the dinner rush at our spot in Denver, a batch of honey glazed salmon stuck so bad it shredded into pieces and we had to comp three plates. Switched to the heavy duty parchment rolls that day and honestly the cleanup time dropped from 15 minutes to maybe 4 per pan. Has anyone else had a stubborn moment about basic prep tools that cost them more in the long run?
I was that same guy for years, always figured parchment was just a fancy add on that made the owner feel better about himself. Then I watched a guy spend ten minutes scraping burnt cheese off a half sheet with a putty knife and something clicked in my head. The cost of a roll is nothing compared to paying someone to stand there scrubbing while tickets pile up on the rail. My old boss used to say the cheap tools are the ones that cost you the most, and man was he right about this. Now I keep two rolls on the shelf at all times and I will never go back to greasing every single pan by hand. Sometimes the basics are basics for a reason and we just have to learn it the hard way.
