Talking to my uncle about my $60 chef knife changed how I shop for tools

I was bragging about this 8-inch blade I bought online, and he just laughed. He's been a line cook in Chicago for 30 years, and he said, 'That knife is fine, but I've got a $15 one from the restaurant supply that's outlasted three of those.' It hit different because he showed me how the handle is molded, not glued, and how the steel is thicker near the bolster. Now I look for utility over brand names, and I'm wondering if anyone else trusts the cheap stuff over the hyped gear?

Is your uncle taking on new family members or what, because I need that kind of reality check in my life? I've got a drawer full of fancy knives that look great on the wall but go dull if I stare at them too hard. Meanwhile my cheap beater with the cracked handle is the one I grab at 6am when I'm half awake and just need to chop an onion. I swear the expensive ones are for showing off to guests, and the ugly ones are for actually getting dinner on the table. Your uncle sounds like the kind of guy who would laugh at my whole tool collection, and honestly, he'd be right to.
