Hot take: My brisket flat turned to leather after a power flicker in a storm

We had a quick thunderstorm roll through Austin, and a single flicker reset my pellet smoker's timer mid-cook. The flat was at 160 internal and just stalled, so it sat for nearly an hour before I caught it. Anyone have a good recovery method for a dried-out flat besides just making chili?

That Austin storm was pretty mild. An hour without heat in the stall isn't a death sentence for a whole brisket. The point probably saved the meal anyway.

Totally agree, that brisket is a goner. Had a power flicker ruin a pork shoulder last year, same deal. Just turns into a dry, sad piece of meat.
