Accidentally left my brisket on the smoker an extra 2 hours last week and it came out the juiciest one I've ever made
Was so mad at myself for zoning out while watching the game but the fat rendered down perfectly and that extra stall time really did something magic, has anyone else had a happy accident like that change how they time things?

That extra time on the smoker is a real thing. I've done the same more than once, fell asleep in the chair and woke up two hours later. The key is that low and slow gives you a huge window before things go south, especially with a good fat cap. You basically stumbled into the truth that most people are too scared to test for themselves. Now you know that extra stall time is your friend, not your enemy. Just don't push it too far or you'll end up with pulled brisket instead of slices.

That part about "most people are too scared to test" hit home. My buddy Dave decided to test that theory once with a pork shoulder. He fell asleep on his couch, woke up six hours later in a panic, ran outside expecting a lump of coal. Thing was still going strong, probe slid in like butter. Only problem was he'd left his beer on the smoker top and it was warm as bathwater.
