Told my brother in Phoenix to stop rinsing his rice before cooking and the texture thing was never about the starch
My brother swore for 10 years that rinsing rice was the only way to keep it from turning into paste, until I cooked him a batch where I skipped the rinse and just used less water (1 cup rice to 1.25 cups water in a cheap pot). The rice came out separate and fluffy, and now he's mad he wasted a decade standing at the sink. Has anyone else found that the "rules" we follow in the kitchen are just guesses someone handed down?
Man, my mom used to make me sift flour three times for biscuits and I finally tried it once without and nobody at the table noticed. Ten years of sifting for nothing. Your brother should be mad at whoever told him that rule in the first place.
