The $40 silicone proofing mat that kept my sourdough alive through a heatwave
Bought a cheap silicone proofing mat after my dough turned into a puddle twice in July, and it saved my bake when the kitchen hit 94 degrees, but the edges still stuck like crazy, so has anyone tried the canvas ones or am I just cursed?

Wait, are you actually baking on the mat or just proofing on it? ...because that makes a huge difference. Honestly, I've had the same issue with silicone, the edges always creep up no matter what. Canvas sounds great but then you gotta deal with washing and drying it, which feels like a whole chore. Maybe you just need a light flour dusting on the edges before you set the dough down... that's what I do now. But yeah, heatwaves and sourdough are just a terrible combo, you're not cursed, just fighting physics.

...and honestly the flour trick saves me every single time. I also switched to a wooden peel for loading instead of the mat, just slide the dough off with parchment. Way less fighting with the edges and the heat, you know?
