That lopsidedness... it's why resting is so important.

Seriously, is that rest period actually make or break? I've totally forgotten to let them sit before and they came out fine, just a little lopsided sometimes. Might depend on how humid your kitchen is that day.

Feel that on the humidity thing... my last batch totally spread out in the summer heat.
