Found a weird hack for soggy pie crusts that actually worked
I kept getting soggy bottoms on my apple pies no matter what I did. After like 5 tries I threw some cornmeal on the bottom crust before adding the filling, about 2 tablespoons. It soaked up all the extra juice and the crust came out crisp for once. Anyone else try something random like that and have it work?

Blind baking is the real MVP honestly. I started doing a full blind bake with pie weights for about 20 minutes before adding wet fillings and never looked back. Keep some foil on the edges so they don't burn while the bottom gets golden.

My first pie crust turned into a cracker and my second was basically dough soup, so I'm all for the blind bake life now. Nothing like a soggy bottom to make you feel like a real professional baker.

My third attempt at a peach pie was basically a soup in a crust, so I feel your pain. I tried the cornmeal trick once but my husband said he felt like he was eating gravel, so that was a no go for us. Your mileage may vary of course. I ended up just blind baking the bottom crust for 15 minutes before adding anything else, and that did the trick for me. It's not as fancy sounding but it saved me from another pie disaster.
