Hit 500 sourdough loaves baked this morning and it caught me off guard
I got out my notebook to log the bake and did the math and realized I've been feeding that starter since 2019, never thought I'd stick with it that long, anyone else lose count of how many times you've made the same recipe?

500 loaves is wild, I read somewhere that the average home baker only makes like 20 loaves before they give up so you're basically a professional at this point haha. I heard on a baking podcast once that hitting big numbers like that actually changes how your starter behaves because its ecosystem gets so stable over years of feeding. I've been tracking my own bakes since 2019 too and I just hit 287, I couldn't tell you the exact number without double checking my notebook. It's funny how the routine becomes second nature, you don't even realize how many times you've done the same stretch and fold until you actually count.

That's exactly how it went for me too man. I didn't even notice I was past 300 until I flipped through my dog-eared notebook one day and saw the dates adding up. The stretch and fold thing is so real, I do it on autopilot now even when I'm half asleep.
