Realized I was peeling carrots wrong my whole life after watching a cooking video

I was sitting there with a peeler and a bowl of water, scraping off like 3 layers of carrot because I thought you had to get all the orange off. Then this chef on YouTube said you only need to take the thin skin off, and I felt like an idiot. Has anyone else had a basic kitchen skill turn out to be way simpler than you thought?

Why would you trust a chef who doesn't peel enough to get the dirt off?

...and I'd say the real issue is that dirt is basically just seasoning you haven't met yet. Look, I get not wanting a mouthful of grit, but a good scrub with a brush gets way more off than peeling ever will. Plus you're tossing half the flavor and nutrients in the skin, which feels like a waste to me (especially with potatoes or carrots). Unless we're talking about something with a thick wax coating, I'll take a well-scrubbed skin over a naked vegetable any day.
