Tried a lemon pepper wing recipe from a Kansas City food truck
Last weekend I was in Kansas City and stopped at this tiny food truck that only does air fryer wings. Their lemon pepper seasoning was insane, so I asked the guy behind the counter what he used. He told me it was mostly fresh lemon zest, cracked pepper, and a tiny pinch of sugar. I came home and tried it in my air fryer at 380 degrees for about 22 minutes, flipping halfway. First batch came out way better than any dry rub I've bought at the store. The zest gets this crispy texture that sticks to the skin, which I never got from bottled stuff. Has anyone else found a killer seasoning combo from a restaurant or truck that you replicated at home? I'm curious if it's worth trying orange zest next time or if that would just get too sweet.
