Finally gave in and meal prepped after months of hating the idea

Honestly, I thought meal prepping was for people with no life but after a week last month where I ate fast food five days straight and spent $80, I tried it. Spent Sunday chopping veggies and cooking rice for three days of lunches and I actually had energy at work. Has anyone else changed their mind about something they swore they'd never do?

That "spent $80 on fast food" hit home. I started doing the same thing, just making a big batch of black beans and rice on my day off. Saves me a ton of cash and I don't feel like garbage by 2pm.

Black beans and rice is a solid move honestly. I do a big batch of chicken thighs with whatever veggies are on sale and it lasts me like 4 days. Throwing in some salsa or hot sauce changes it up enough so I don't get bored. Plus it's way easier than trying to cook a full meal after work when you're already drained lol.
